Panera Bread sent me an email gifting me with a free pastry for my birthday. Woo hoo! I love dessert! Last night I had a group meeting at Panera, but I did NOT get the pastry. I ate a healthy snack in the car beforehand instead. How strong am I?

Nice! I was just getting a craving something sweet. Then I saw your post. Thanks for sharing. It helped me to be strong and to go grab something healthy. I just ate a banana.

Nutrition seems to be hardest for everyone. For dinner tonight I'm having a Garden Lites Zucchini Souffle (I love these things! Quick, easy, a little high in sodium, but tasty and good for you otherwise), hummus with peas and a few multi-grain crackers, maybe some butternut squash. Probably a protein cookie for dessert. My friend makes them and they are soooo good! I don't know if it's okay to post web sites but you can Google Alex's Whey. She lost a huge amount of weight and created these cookies as a healthy treat. I'll hit the gym around 8:30 pm for sprints and have a small snack (banana or a couple of clementines) after.

This weekend will be tough because my husband wants to take me to dinner for my birthday Saturday and Sunday my mom wants to bake me a cake. I requested Angel Food cake so it won't be too caloric!

Hey, we share a birthday week

most amazing permissible dessert? chocolate cake made with 72 percent or higher dark chocolate bar melted and 3/4-1 can of white great northern beans along with some baking powder, blended together. SO GOOD and the best "cake" in terms of being good for you. I make muffins this way. WONDERFUL!

chocolate cake recipe: 3.5 oz (100g) dark chocolate

7 oz (200g) canned beans (I took white ones)

2 eggs

1/4 1/2 tsp baking powder (depending on how spongy you want the cake)

Preheat oven to 350 degrees F. Melt chocolate, blend in with white beans and baking powder, and blend in eggs slowly. Bake about 30 min.

Here's to healthy chocolate birthday cake!!

Healthy Chocolate Frosting

1/2 cup (1 stick) unsalted organic butter, softened,
1/4 cup plus 1 tablespoon erythritol, powdered, OR 1/4 cup xylitol, powdered
5-6 tablespoons unsweetened cocoa powder
2 tablespoons half and half OR coconut milk
1 teaspoon pure vanilla extract
Pinch of sea salt
truvia or sugar substitute of your personal choice to taste

optional: 1 egg yolk (makes it look glossier basically)

Cream the butter in a small bowl until fluffy. Powder erythritol or xylitol in a coffee grinder or Magic Bullet for a minute or two, until extremely fine in texture (reminiscent of powdered sugar). Let sweetener settle in grinder before opening the top. Stir powdered sweetener into butter with a spatula, then beat until smooth. Slowly blend in the cocoa powder (unless you want to redecorate your kitchen), vanilla, and sea salt. Beat in the half and half and egg yolk, if using. Add stevia, starting with 1/16 teaspoon. You'll probably use less than 1/4 teaspoon. Just keep tasting and adjust sweetness to your liking.

you could also add crushed almonds or walnuts as a topping if you wanted to (or mix them into the frosting) or you could add a few drops of mint extract for a mint chocolate frosting or cake.

I've never used Erythritol or Xylitol and would have to go find some - do you think Agave would work? I have that at home.

Wednesday

Exercise -
It was supposed to be an off day, but a friend came to work out with me at the gym so we ran stairs (4 stories up and down 15 times (approx 2500 stairs) 17 min) and 25 min on the Expresso bike. I am SO SORE today!

Nutrition -
Coffee
Whole grain English muffin
Lemon Chobani yogurt

Salad (romaine, broccoli, yellow squash, salsa)
Honeycrisp Apple
Clementine
Coffee

Bowl of Homemade Chicken soup (whole grain pasta, chicken, peas, beans, carrots, etc)
Slice of whole grain bread
Protein cookie

Clementine
Bowl of Chicken soup
Kashi granola bar
